Hog roast Swerford

The weekend has been busy with some of 8 events at needless to say at various locations and one including hog roast Swerford. It tends to make the days very long with early starts and late finishes, and what seems endless loading and cleaning to ensure that every event is perfect. We never like to leave anything to chance so everything is checked.
They were a wedding this Saturday in Swerford and I had done a site visit several months earlier, it had been agreed that the garage would be our work area. It was spotlessly clean. However with the addition of an Aston Martin, this was a first with the task of cooking alongside a rather valuable car. We set up the chicken spit roast and prepared the lamb.
We pricked the lamb to ensure that it self-basted itself. Once it was roasting the lamb became coated with juices and enabled the ground fresh garlic and finely chopped rosemary to stick to the lamb.Hog Roast 015
The chickens were dusted with some exciting spices. It was not long before they started to colour and the aromas were truly exotic. Hopefully they didn’t linger too much, affecting the precious Aston Martin!
We had the rather unusual timing of starting to cook the evening Hog Roast half way through the afternoon whilst the main wedding breakfast had not been served.
Fortunately we had two teams so we were able to concentrate on both at the same time.
The menu for the main event was fairly elaborate offering Halloumi Kebabs for everyone alongside the two roasts as well as two varieties of sausages with salads and vegetables.
All went well and was followed by a selection of desserts served on a covered full size snooker table (next to the Aston)
Once the inevitable speeches and cake cutting were over, we were nearly all cleared up for the first team to leave.
The evening crew were ready to follow on with a Hog Roast and salads.
It was unbelievable that guests still had space for the final event. Guests were entertained by a never ending display of fireworks that lit up Swerford. What a great wedding!
